Discussing politics while in Egypt is generally not a good idea. But if you absolutely have to, these are the subjects to avoid.
Gamal Abdul Nasser who was first president for the Arab Republic of Egypt along with other people are Egypt's national heroes; so do not insult any of these people in any way. President Hosni Mubarak and Anwar Sadat are fairly unpopular at the current moment, but it is wise not to talk about politics unless an Egyptian you know brings it up first. Be careful talking about these subjects and let other lead the way in discussions.
Most Egyptians don't have the mindset that westerners have as far as views on freedom of speech and they may not be interested in not having free elections. It is best not to start a discussion on politics or other sensitive subjects on an impulse.
Do not talk about Israel period; if you do have to mention it talk softly even if you are only doing travel arrangements.
Discussing Religion
Never speak about atheism or other like viewpoint. Even the Egyptians that are highly educated abroad will not like this and close the door on you.
